The White Sturgeon is California's largest game fish and at one time was considered a trash or nuisance fish. They were almost decimated in the 1800's when they were caught in the Salmon nets in the San Francisco Bay and Delta waters. Their only use was for their roe to make caviar. This caviar was served in the bars and lounges of San Francisco as a free appetizer. Now their highly sought-after meat has become a gourmet delicacy along with the caviar.
